I’ve always been super picky about my greens but this salad is amazing. It’s packed with nutrients and it’s extremely yummy. On top of all that, it’s super simple and quick to make.
- Kale, chopped
- Spinach, chopped
- Cabbage, shredded
- Carrots, cut or shredded
- Dried cranberries
- Pepitas, roasted and salted
- Sunflower kernels, roasted and salted
- Asiago cheese, shredded
- Dressing of choice (I like a Garlic Vinaigrette but my mom puts Yum Yum sauce on hers!)
I just eyeball the ingredients and throw as much in as I’m feeling that day. If you like, you could always add a hardboiled egg or for my meat eater friends, add some chicken. If you’re using a lemon-based dressing, you can squeeze some fresh lemon juice overtop it. I know that salads can seem blah (trust me, I feel you) but this one is so yummy and packed with health benefits. And I think a chopped salad is always better.
