Hey guys! This week for dinner I made some vegetarian tacos that I wanted to share with you. They are simple, quick, and healthy for you! The best part is that you could make them your own way and cater to your own taste preferences!
I made two and both slightly different. For both, I used:
- Black beans
- Brown rice
- A shredded Mexican cheese blend
- Hot sauce
In one, I made the same broccoli slaw that I put on my veggie burgers. In the other, I added pico de gallo as a finishing touch.
Once you cook the rice, beans, and corn, these come together so quickly with minimum effort, which is something I enjoy because I’m a lazy cook. Plus, there are a ton of leftovers, which I’m also a huge fan of.
This week I’m proud of myself for actually pulling out my camera! I haven’t used it in awhile so it was nice to bring it out for this post. Here’s the last picture I had on it (not the best quality, but I have a cute dog):
